Sloppy Joes

Sloppy Joes
From Cooking Light
Yield:12 servings
(serving size: 1 sandwich)
Ingredients:
3/4 cup chopped onion
1/2 cup chopped green bell pepper
3/4 pound ground round
2 cups no-salt-added tomato sauce
2 tablespoons tomato paste
1 tablespoon prepared mustard
1 teaspoon chili powder
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
12 (1 1/2-ounce) rolls, split
Preparation:
Heat a large nonstick skillet over medium heat. Add first 3 ingredients; cook until beef is browned, stirring to crumble.
Stir in tomato sauce and next 8 ingredients (tomato sauce through black pepper); reduce heat to medium-low.
Cover and cook 15 minutes, stirring occasionally.
Spoon 1/4 cup beef mixture over bottom half of each bun.
Cover with top halves.

Taco Casserole

Taco Casserole

Thank you: two maids a milkin'!



Ingredients:
1 lb. hamburger
1 pkg. taco seasoning
8 oz. sour cream (I would suggest using 1/2 of this. the sour cream sort of overwhelmed the rest of the flavors for me)
1 pkg. crescent rolls (8)
1 can tomato sauce
1 can diced tomatoes (I used rotel, I like things a little spicy)
1 c. shredded cheese
Dorito chips

Directions


1. Brown hamburger and drain.

2. Add taco seasoning, tomato sauce, tiny bit of water, and diced tomatoes. Simmer...

3. In 9x13 dish, press out crescent rolls and roll them to form crust.

4. Here comes the Dairy!!! Layer hamburger mixture, sour cream and then cheese.

5. Crush about 3/4 of a bag of Doritos and put them on top. Bake at 350 for 30 min.





Enjoy!!!

The only thing i would change is cutting the sour cream wayyyyyyyyy down, or cutting it out completely and adding it on each dish individually.

The sour cream flavor over whelmed most of the dish. which i'm normally okay with, but this time it was a tad much for even me. and my love for sour cream normally knows no bounds.

Cheesy Turkeyburger Casserole

Cheesy Turkeyburger Casserole

Ingredients

18oz 93% Lean Ground Turkey
2 cups Whole Wheat Elbow Macaroni (or any pasta)
2 cups Reduced Fat Shredded Mozzarella
2 cans Diced Tomatoes
1 tbsp
Oregano
1 tbsp Basil
1 tbsp Ground Cumin
2 cloves minced Garlic
1/2 cup Newman's Own Tomato Basil Tomato Sauce
Salt and Pepper to taste

Directions

Preheat oven to 375*F.

Cook macaroni according to package and drain.


Brown turkey.


Add meat, tomatoes, garlic,
sauce, oregano, basil, cumin, salt, and pepper. Mix together.


Add mixture to macaroni and pour in a baking dish coated with cooking spray.


Heat in oven for 7 minutes.

Add cheese to the top and bake until cheese melts and dish is bubbly (5-10 min)

Let set for about 5 minutes before cutting.

Chicken & Wild Rice Casserole

Chicken & Wild Rice Casserole

1 – 6oz package long grain and wild rice [i used uncle ben's]
1 - medium onion chopped (1/2 cup)
1-Celery stalk, chopped (1/2 cup)
2- tablespoons butter
1- 10.5oz can condensed chicken with white and wild rice soup, or cream of chicken soup
½- cup sour cream
1/3- cup dry white wine or chicken broth [I used chicken broth]
2 - tablespoons snipped fresh basil or ½ teaspoon dried basil
2 - cups shredded cooked chicken or turkey [I used .6lb ground turkey]
1/3 - cup finely shredded Parmesan cheese

1) Prepare rice mix according to package directions
2) Preheat oven to 350*
3) In a large skillet, cook onion and celery in hot butter over medium heat until tender. Stir in soup, sour cream, wine, and basil. Stir in cooked rice and chicken

4) Transfer mixture to an ungreased 2qt baking dish.


5) Sprinkle with cheese. Bake, uncovered about 35 minutes or until heated through.



-Makes 4 servings-

Per serving –
479 Calories, 20 G fat, 101 mg cholesterol, 1,559 mg sodium, 42g carbs, 2g fiber, 30 g protein.

Zesty Beef Casserole

Ingredients:

1 teaspoon cooking oil
1 pound lean ground beef [again, I used ground turkey]
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped red pepper

1 (14 ounce) can of stewed tomatoes (with juice), chopped

2 cups medium egg noodles [I used whole wheat wide noodles]
1 (12 ounce) can of kernel corn (with liquid) [nope, still didn't use corn]
1 1/4 cups water
1 (4 ounce) can of diced green chilies
1 (1 1/4 ounce) envelope of taco seasoning mix
1/2 teaspoon salt
1/4 teaspoon pepper

1 cup grated jalapeƱo Monterey Jack cheese

Sliced black olives, for garnish

Directions:

Heat cooking oil in large frying pan on medium. Add next 4 ingredients. Scramble-fry for about 10 minutes until beef is no longer pink. Drain.

Add tomatoes with juice. Stir.

Transfer to ungreased 3 quart casserole.

Add next 7 ingredients. Stir. Bake, covered, in 350°F oven for about 1 hour, stirring once at halftime, until noodles are tender but firm.

Sprinkle with cheese. Bake, uncovered, for another 5 to 10 minutes until cheese is melted.

Garnish with olives.
