Now after a slight failure with the last recipe I used that called for biscuits, I was a little worried about trying this one. but the recipe just looked so good.
Ingredients
(this may look like a long list, but its really not. You should have most of this stuff in your spice cabinet)
1 lb lean ground beef (I used 1.25 lbs turkey, because that's the size of the package)
1 medium onion, chopped (approx. 1/2 cup) (I used red onion)
1 small sweet green pepper, coarsely chopped (approx. 1/2 cup)
1 15oz can of chili beans in chili gravy, undrained (I used plain turkey chili)
1 8 oz can - tomato sauce
1 6 oz can - tomato paste
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon bottled hot pepper sauce
1 12 oz can refrigerated biscuits
1 8 oz carton sour cream
2 tablespoons all purpose flour
2 cups corn chips, coarsely crushed
1 cup shredded cheddar cheese
chopped green onion
Step 1)
Preheat oven to 375
In a large skillet cook ground meat, onion and sweet pepper over medium heat until meat is cooked and the onion is tender.
drain off fat
stir in beans, tomato sauce, tomato paste, chili powder, cumin, and hot pepper sauce.
Bring to boiling
reduce heat
simmer uncovered for 5 min, stirring frequently
Step 2)
Meanwhile lightly grease a 9 or 10 inch deep dish pie plate .
For the crust unwrap and separate biscuits. press biscuits onto the bottom and up the side of the prepared pie plate. (Make sure the biscuits go all the way up the side and over the top if you can.)
Spoon meat mixture into crust
in a small bowl combine sour cream and flour (I added some extra hot pepper sauce to my mixture). Spread over meat mixture
sprinkle chips and cheese over the top.
Step 3)
Place pie plate on baking sheet.
bake uncovered for approx 30 min. or untill mixture is heated through and crust is golden.
let stand for 10 min before serving, sprinkle with green onions.
makes approx. 8 servings.
I really wish I had pictures of this one. It was so SO good.
Seriously make this people!
I just used the standard grands reduced fat biscuits. and it was really good.
It reheats only slightly soggy, but was still really good the next day for lunch.
I crunched up more chips on mine, but i have a squishy spot for corn chips.
