The magazine I got it from Called it 'upside-down Pizza Casserole' but I tweaked it a bit so the name doesn't really fit. But I called it Turkey Biscuit Casserole, it seems more fitting.
Ingredients
1) 1.5lbs Ground beef ( I used ground turkey)
1) 15 oz. can of hunts diced tomatoes (i used fire roasted w/garlic)
1) 4 oz can of mushrooms (we didn't use this cause we hate mushrooms)
1) 4 oz can of diced olives (this is optional, we used them)
1) 1.5 cups of mozzarella (or Italian blend cheese)
1) 12 oz package of refrigerated biscuits
1) tablespoon basil.
Preheat oven to 400 degrees
In a large skillet, cook turkey over medium heat until cooked. Drain off fat. Stir in tomatoes, mushrooms, olives. Heat through.
Transfer mixture to ungreased 2 quart baking dish.
sprinkle with 1 cup cheese. (i mixed it in)
flatten each biscuit slightly and arrange biscuits on top of mixture. (try not to over lap to much)
bake uncovered for 15-17 minutes or until the mixture is heated and biscuits are golden.
-------------------------------------
I overlapped the biscuits so the center of the biscuit mound was raw.
I also mixed the cheese and basil. I also used the basil that comes in the tube because i couldn't find any fresh and I think it turned out better
sprinkle with the rest of the cheese and basil.
