Penne Alla Vodka


I've made this one a bunch back home, but I really like it. So I thought I'd make it again.

Penne Alla Vodka & French bread
4 Tablespoons extra virgin olive oil
1 red onion (cut into 1/4 inch dices)
1/2 cup vokda
2 cups basic tomato sauce
1/2 cup heavy cream
1 pound barilla penne
1 cup Parmigiano cheese
1 container Simple Rustic french bread


Step 1 - bring about 6 quarts of water to a boil and add about 2 tablespoons of salt

Step 2 - in a large saute pan, heat oil over meadium heat, add onions and cook until light golden brown (about 6-7 min). Add vodka and cook until liquid is reduced by half (about 4-5 min).
add tomato sauce and the cream, cook until the sauce has reduced by a third (about 10 min).

Step 3 - Bake french bread according to package directions.

Step 4 - Meanwhile cook pasta in biling water for about 1 min less than the package directions indicated. Drain pasta and add it to the sauce pan. Stir together over very high heat for 1 minute. remove pan from heat, add parmigiano cheese and toss.

Step 5 - Remove bread, slice, serve with pasta. mmmmmm.

I've mad this a bunch of times, and each time I try to improve on it.

This time I used 2 types of cheese, and added a little bit of spice to the sauce ( a couple of dashes of Italian seasoning) pepper.

The last time I added cubed chicken to the dish.

Also, you can tell I didn't use penne pasta, but we had whole wheat shells in the cabinet, so thats what I used.

Either workds.

So good!!
